牛顿酒庄无过滤 Chardonnay的评论

虽然是无过滤，酒色却是晶莹剔透，没有一丝的浑浊。

也许是因为无过滤，开瓶就弥漫宜人的酵母香。
像老北京手工馒头的酵母，也像上海早餐烧饼的酵头，
但比酵头的酸味淡，多出的是烧饼涂了蜂蜜入炉后酵头与烤糖的混和香味。

醒酒20分钟，酵母香淡去，太妃糖，奶油糖的味道增强，携带密瓜，无花果，及榛果。
口感稠密，似淡淡的酸奶。入口果味浓，依然有酵头与烤糖的混和香。
酸度略强，适合浓味白肉。
口中余味清爽，是柠檬，是青苹果。以及淡淡的奶糖。

帕克建议此酒配食海鲜，诸如龙虾，三纹鱼等海鲜。

华人主厨蔡明昊在欢迎中国国家副主席习近平的白宫午宴中， 选中 Newton Unfiltered Chardonnay 2008 为佐餐酒。

菜单中包括含香酥鸭肉卷和蔬菜末的烤甘薯汤；佐以黑蒜酱的酱腌阿拉斯加鲳鱼；配干果和猪肉肠的八宝饭团；姜味瑞士甜菜；以及配小豆蔻冰激凌的黑巧克力蛋糕。

Robert Parker said, in 2007, that the Unfiltered was "One of California's most glorious Chardonnays." Fermented with native yeasts, aged for 16 months in 30% new French oak barrels and bottled, as the name says, unfiltered, the 2008 version is creamy and rich, with brown sugar, spice, hazelnut and bread dough scents and flavors that complement the melon and fig fruit that dominate. A bigger style, this would be fantastic with richer foods like lobster in cream sauce or salmon with a lemon beurre blanc.
