Carefully pressed to extract maximum flavour with minimum skin tannins, this wine is fermented and matured for 11 months in new French oak. The final wine has a crisp, natural acidity with fresh grapefruit and peach flavours. The long, refined finish suggests that with careful cellaring it will mature in bottle for over ten years. Try with oysters, lobster bisque and barbecued octopus.
