Clover Hill sparkling wine is sourced from pre-eminent vineyards in the Pipers River region of north-east Tasmania; an area becoming acknowledged as the premier location for cool climate sparkling wine in Australia. Clover Hill’s first vintage was in 1991 made from 100% Chardonnay fruit. Since 1994 the blend has evolved to include a substantial proportion of pinot noir and pinot meunier. Clover Hill 2003 is crafted according to traditional methods and matured on lees in its bottle for a minimum 3 years. It contains components of selected reserve wines aged in French oak foudres to ensure the unique personality that is the Clover Hill house style. Winemaker’s Comments An attractive hue of pale straw colour with a persistent fine, vibrant bead and gentle foaming mousse. Complex layers of stone fruits, almond biscuit and toasty coconut characters derived from time on lees and aged reserve wine. Elegant, yet with superb length and breadth of flavours.
